Pecorino Romano Locatelli

Sheep Milk

Pecorino Romano, dating back to ancient Roman times, is one of the oldest recorded cheeses. Named after its ingredients and origin, it’s made from sheep’s milk (‘Pecorino’) and is of Roman descent (‘Romano’). Its production is limited to Lazio, Tuscany, and Sardinia, from November to June, ensuring consistent flavor due to similar pastures and sheep breeds. As a DOC-protected cheese, its making is strictly regulated. The most famous brand in the U.S. is Locatelli. This hard, dense cheese is aged for at least nine months, characterized by a strong, sharp flavor, pale yellow color, and a black paper rind with the Locatelli name. It is commonly grated over pasta, soups, and salads, or served as a dessert with honey and ripe pears.
